...so how do I type (what I presume are) hiragana with an American keyboard?

On mobile, if you have an Android: install Google Japanese Keyboard. It'll let you pick from kana groups with swipe direction choosing the vowel. Pretty slick, although I'm very slow at actually using it thus far.

On Windows, you download the Japanese Language Pack and then you can type phonetically using your US keyboard. I like putting the language pack icon in the system tray (that little rider on probably-the-right-corner of your taskbar) for easy access.

Edit: that actually permits hiragana, katakana, and kanji. The automated kanji choices can get weiiiiird, so keep an eye out for homophones.
