RE: meals, you might try The Giant Day-Off Meal, and then just pick at the leftovers for the next few days? I know work and school take up a lot of time, but if you can managed to do like, a roast (or meatloaf) and two veg and a starch on your day off, that can turn into a lot of meals when you realize you're hungry on working days.
