...I distinctly recall iTunes having a feature to convert, within iTunes, the .m4a files one buys from iTunes to .mp3? Am I misremembering, or is it hiding, or did they take that out?

I think it's hiding? Highlight the song you want to convert, File --> Convert --> Create mp3 Version.
