I don't know how I switched my tablet onscreen keyboard layout to something with a lot more math signs, but I didn't notice any symbols missing and this got me my double quotes back so I wasn't going to worry about it.

Problem is, now I have switched it back to the layout with two equals and no double quotes, and I don't know how I did that either...

Might well be the case that e.g. long press on the space bar toggles layout/language?

Apparently so, but via a dialog I certainly have not seen before now, so

On tablet keyboards I am familair with the toggle button between keyboards is in a bottom corner. Could you be tapping it on accident with a wrist?

I have a weird two finger glove I wear when doing art on a tablet to keep it from reading the wrong input. One of these. Art programs have lots of buttons that you can push on accident and will ruin your day.
