I'm gonna be going to my parents' Friday to, among other things, borrow their kitchen to cook lots food. And I am NOT worrying about gluten-free, because reintroduction phase! In fact I think I want everything as gluten as possible! So I am PLANS.
A) Grandma D's meatballs, veggie-loaded edition. (IIRC this involved grinding spinach and carrots to mush and then adding LOTS bread crumbs and an egg or two? Must take notes this time!) And spaghetti.
B) Pasta primavera. MANY VEGGABLES.
C) Pizza to share—some GF, all meatless (Friday in Lent; not all my folks are Catholic—actually maybe only Mom and brother are Catholic!—but y'know). Toppings TBD (but definitely pineapple!), but because to share, I don't necessarily have to put toppings and whatnot on my shopping list.
D) ...um. Something V EASY and probably chicken- or seafood-centric but not simply baked chicken? Maybe cream tuna? Though cream tuna is not exactly BRING ON THE GLUTEN, either... ETA: oooo, Cajun chicken pasta? http://www.food.com/recipe/creamy-cajun-chicken-pasta-39087#activity-feed bet it'd work great with seasoned shrimp added in the last few minutes of cooking, too...

... Chicken bean soup? V easy - chop chicken, open beans, heat, scald favorite leaf in boiling soup, eat up. Can gluten if served with bread (recommended) or crackers.
