gluh. do I want to get rid of the half bag of medium-dark-roast whole coffee beans, or do I want to mix it with the light roast at a dark:light ratio of something nontrivially lower than 1:1 until I run out of the medium-dark stuff? because mixing the medium-dark half and half with the light still results in coffee that is absurdly bitter even when then mixed with more than the quantity of milk and a whole bunch of dark chocolate syrup!

Others have already said it, but you don't need to punish yourself for having bought beans that you don't like. Fallacy of sunk costs -- make a gift of them to someone who will use them, and the gift to yourself of not feeing guilty about it.
