cold brew coffee has resumed
gluh. do I want to get rid of the half bag of medium-dark-roast whole coffee beans, or do I want to mix it with the light roast at a dark:light ratio of something nontrivially lower than 1:1 until I run out of the medium-dark stuff? because mixing the medium-dark half and half with the light still results in coffee that is absurdly bitter even when then mixed with more than the quantity of milk and a whole bunch of dark chocolate syrup!

I learned that I can make my french roast coffee waaaayyyy less bitter by putting the water in, covering for 30s, stirring, covering again for 4-5 mins, stirring, then taking a spoon and ladeling off the foam at the top (which is where all the bitter is).
I've heard Aeropress can be less bitter as well, and Chemex ($$) can be extremely mellow.
If I know the coffee is going to be extra bitter, 1/16th tsp of salt added to the pot before adding the water also helps, you might try that as well.
